Valpolicella Classico Superiore Acinatico Ripasso is a product deserving a particular attention, since it is obtained through a technique called "ripasso": the grapes are restrained on the marcs of Amarone, thus acquiring its same structure, bouquet and pleasantness. This process makes this wine similar to the great international red wines. Once Amarone is extracted from the grapes, Valpolicella is restrained on its virgin marcs for at least 15 days: in this period the wine completes its fermentation and reaches the level of alcohol, structure, ashes, tannic substances and bouquet that are typical of a refined wine such as Amarone. Properly preserved at a steady temperature of 14°-15°C, laid down, in the dark, this wine can keep its characteristics for 10- 15 years. Colour: intense ruby red. Bouquet: intense, delicate and aethereal with scent of spices and vanilla. Flavour: warm, full-bodied with scent of fruit that reminds of Amarone.

Accordini "VALPOLICELLA" - Valpolicella Classico DOC
Valpolicella Classico is the traditional red wine to be drunk when still new, fresh, fruity and medium body. This wine is supposed to be the Rhaetian wine loved by the emperor Augustus, but it surely was the wine preferred by king Theodoric, who considered it one of the best in Italy. Nevertheless the best description of it is given by Hemingway: in one of his novels he talks about Valpolicella with great affection: it is dry, red and friendly like the house of a brother. This wine is appreciated when still new, but properly preserved at a steady temperature of 14°-16°C it can keep its characteristics for 2-3 years. Colour: ruby red with violet shades. Bouquet: intense scent of cherries and raspberries. Flavour: very delicate, salted and sapid.

A red, fruity, medium bodied wine which should be drunk young. This is the perfect accompaniment to Italian “antipasti”, soups, pasta dishes, white and red meats and to the wide variety of dishes that the Mediterranean has to offer. Serve at 14°-16°C and open the bottle a few minutes before drinking.

Baltieri "MONTE PARADISO RIPASSO" - Valpolicella Superiore DOC
Aged 18-24 months in barrels. Refinement then proceeds in bottles for at least one year. Colour: deep ruby red with grainy tinges. Bouquet: hints Bouquet: hints of cherry in spirit and the vanilla which comes from the wood. Strong aroma of woodland fruits. Flavour: Well-bodied and balanced with a hint of bitter almond, cherry and spices. This wine is an ideal accompaniment to grilled meat dishes and seasoned cheeses. It should be left to breathe for at least one hour and drunk at room temperature. Store in a cool, dry and dark place.

Begali "VALPOLICELLA" - Valpolicella Classico DOC
Owes its name to the area in which it is produced. A young wine suitable for most occasions. Ruby and cherry red in color, with a fresh, gentle and sweet aroma, full of fruit remembering cherries. Light and soft in flavour, with a small hint of bitterness on swallowing when the wine is young. Serve at 16 - 20°C with any mains. Good for starters with meat, boiled and white meats.
