The Castle in Soave PIEROPAN FAMILY AND COMPANY. For many years now, the world of wine has looked to Pieropan as a benchmark winery, expressing their fine appellation's ultimate quality. Their profound commitment to the terroir and tradition of Soave is the Pieropan's family heritage, and the philosophy behind this operation. Another central issue for Nino Pieropan (who personally orchestrates the wine-making) is vineyard management: in his view, great wine starts in the vineyard. Through the years, Nino has therefore acquired prestigious hillside crus such as Calvarino and La Rocca, has employed increasingly innovative viticultural methods, and has effected intensive clonal research - safeguarding near-extinct varieties, exploring Garganega's potential to the full, consistently employing such methods as short pruning, green harvest and organic manuring. In the winery quality criteria are just as strict. State-of-the-art equipment and wine-making creativity combine with the experience of past generations, offering a unique synthesis of old and new. Today Leonildo and Teresita have teamed up with their sons Andrea and Dario, both graduated in enology and viticulture. With their youth, enthusiasm and determination, they will guarantee an interesting and innovative future development in the company. PIEROPAN WINES
SOAVE CLASSICO. From grapes grown on hillside vineyards of the Soave Classic sub appellation (90% Garganega, 10% Trebbiano di Soave), the hear to the Soave DOC. The soil is clayey-basaltic and volcanic in origin, conducive to a fine white wine, brilliant straw yellow with greenish hues in colour. The delicate nose is reminiscent of almond blossoms, cherry blossoms and hawthorn blossoms. Complex on the palate, it has excellent structure and good acidity, soft texture, sapid and balanced. Excellent with soups, first courses based on vegetables and eggs, sea and lake fish.
CALVARINO SOAVE CLASSICO. The Calvarino vineyard is the original nucleus of the family homestead, where the traditional varieties, Garganega and Trebbiano di Soave, are grown in their customary percentages, respectively 70% and 30%. The soil is volcanic in origin, rich in basalt and tufa. It represents Soave's highest and finest quality level: lively, crisp and fruity, complex on the palate, with net and well-balanced, clean flavours. The first Calvarino's label has been made in 1971. It matches a great variety of dishes, and is ideal with vegetable terrines, cheese soufflés and delicate fish dishes. ![]() LA ROCCA SOAVE CLASSICO. This vineyard takes its name from the adjacent Medieval castle and fortress, ("la Rocca") dominating the little town of Soave, just east of Verona. The soil is "eocene" in origin, with abundant microelements, calcareous/clayey in structure. The resultant wine is from 100% Garganega grapes, late harvested so as to ensure maximum extract and aged in oak barrels for one year. It is a characterful wine, reminiscent of exotic fruit and hazelnut on the nose, soft and persistent on the palate, with hints of spice and citrus fruits. The first La Rocca's label has been made in 1978. It evolves beautifully with time, achieving that rare balance of components, that harmony of flavours and bouquet, which is the hallmark of superior breeding. Ideal with tasty fish like salmon, scallops, crabs and white meat.
LE COLOMBARE RECIOTO DI SOAVE. This dessert wine is obtained from the shrivelled "recie" ("ears" in the Venetian dialect) of choice Garganega grapes, the top part of each bunch, with the ripest and best exposed berries. The bunches are laid out on traditional straw mats, in well aired rooms for few months. In early spring, the semi-dried grapes are pressed, and the resulting wine is aged in oak barrels for two years. Intense gold, almost amber coloured, delicately reminiscent of exotic fruit and apricots on the nose, its initial impression on the palate is delicately sweet, a prelude to pleasing and unexpected aromatic complexity. Excellent on its own or at the end of a meal, to accompany almond pastries, blue cheese such as gorgonzola, or mature cheeses.
PASSITO DELLA ROCCA. This wine was created as the Pieropan's own dessert wine, distinguishing itself from the area's traditional style. Made from 60% Sauvignon, 30% Riesling Italico, 10% Trebbiano di Soave, it is I burnhed gold in colour, with translucent yellow reflections; intense and complex on the nose, exhibiting great finesse, with a bouquet of raisins and acacia honey, and hints of withered flowers, cinnamon and walnut husks. On the palate, it is very elegant, sweet but not cloying: lively, clean and extremely well-balanced, with flavours reminiscent of dried apricots and toasted almonds; and incredible length.
