The most Franciacorta of Franciacortas. Elegant, seductive, with ever-changing nuances. Subtle notes of citrus meld ef-fortlessly into hints of tropical fruit. Made exclusively from Chardonnay, and crafted in a way to produce an effervescence more delicate than that of the other styles. It rests sur lie for a minimum of three years. An aperitif of aristocratic proportions, but at the same time a superb choice at table for complementing dishes of fish and light meats.
TYPE OF SOIL: Partly of morainic origin, loose, drained and with an abundant skeletal texture.
TYPE OF GRAPES: 100% Chardonnay, from different vineyards.
YEAR: 2011 vintage and therefore obtained from the skilful assemblage of the best Chardonnay grapes of that year with the best elegance and structure
HARVEST: Between the end of August and early September, when the grapes have reached the correct sugar ripeness, but still have considerable acidity and freshness.
AGEING: Over 42 months from harvesting, of which at least 30 on yeasts. After disgorgement, the bottles rest in the cellar for another 5-6 months.
COLOUR: Pale yellow with highlights veering towards gold reflexes
BOUQUET: Intense and harmonious, with notes of fruit and hints of tropical fruit
PALATE: Involving, elegant and persistent structure, nuts aftertaste
PERLAGE: Fine and persistent, soft, delicate and creamy mousse
SERVE WITH: It is an excellent accompaniment to delicate hors d’oeuvres of fish and shellfish, white meats and perfect as an aperitif.
