PLACE OF ORIGIN: Selegas Estate.
SOIL: Good sun exposure, limestone-clay grain size and structure.
GRAPE VARIETIES: Vermentino.
CLIMATE: Mediterranean, mild winters with limited rainfall, summers dry, hot and windy.
HARVEST: Using refrigeration at the moment of harvest.
VINIFICATION: All the initial operations, soft pressing and natural decantation, take place at a constant temperature of 10-12°C in an oxygen-free environment, in order to preserve the must from oxidation. Fermentation takes place at a controlled temperature of 16-17°C and lasts around 15-20 days.
TASTING NOTES: Colour soft straw-yellow with greenish tinges. Nose intense primary aroma with predominant notes of citrus and fresh fruit. Palate lively, very fresh and tasty, balanced, delicate and fine.
SERVING: Tall slender glass, serving temperature 8-10°C.
FOOD MATCHES: Excellent as an aperitif with seafood dishes and shell fish; to accompany sushi, sashimi and starters, light white meat and fish dishes.
