SOIL: Limestone-clayey structure, soft slope, good sun and wind exposure, average rainfall about 550 mm/year.
GRAPE VARIETIES: Monica, Carignano, Bovale Sardo.
CLIMATE: Mediterranean, mild winters, limited rainfall, very hot and windy summers.
HARVESTING: By hand, in the early morning.
VINIFICATION TECHNIQUE: Fermentation at controlled temperature of 27-28°C for 8-10 days with moderate extraction of phenolic substances. Development in cement tanks and for a short period in small casks of French oak.
TASTING NOTES: Colour Intense ruby red with an undertone typical of Monica. Nose Vinous, intense, characteristic. Palate Round, final aftertaste almost tending to sweetness, a typical feature of erect-shrub grown Monica grapes.
STORAGE: Constant temperature 18°C, humidity 75%, controlled light, horizontal bottle.
SERVING: Medium sized goblet, temperature 16-18°C.
FOOD MATCHES: Traditional pasta dishes dressed with tomato sauce, tasty fish stews, slices of grilled tuna fish, stewed lamb, pecorino cheese, medium matured.
