Alcohol: 15% vol.
Vinification: Harvest period first week in October. Must time on the skins. The grapes are de-stemmed and pressed, then remain in contact with the skins for some 2 weeks, during which pumping over, punch-downs, and délestage are practiced in alternation. The must is settled and ferments at a controlled temperature. Maturation in wood for 12 months. In the bottle for a minimum of 6 months.
Serving suggestions: Ideal with red meats, game, and aged cheeses. Perfect as well as a sipping wine.
Serving temperature: 18/20°C. Open the bottle some hours before serving. Glass Balloon style. Storage Beyond 2-3 years. Lay on its side in a cool, dry place away from light.
