from our vineyards located within the hilly area of the Soave Classico zone (200-320 mm. S.l.m.) in the town of Castelcerino.
the harvest, conducted 100% by hand, occurs during the month of October. All of the grapes are collected into small 44 lb. capacity bins in a way to ensure they arrive at the press perfectly intact. 40% of the grapes undergo the “appassimento” process, where they are hung vertically to dry in our “fruttaio” for approximately 40 days. The remainder of the grapes are fermented immediately. The wine is matured in large (1500L) French oak barrels for 12 months, after which it is bottled and matured for another 2 months prior to release.
Colour: deep yellow with hints of gold.
Bouquet: an intriguing nose that seduces with its gradual evolution. One can pick up the aromas of ginestra, thyme, yellow peach and susina. Sweet spices and vanilla. On the palate, the wine is dry with hints of smoke and pepper around a rich, silky core. The oak is impeccably integrated.

ideal with a hearty soup or with aromatic cheeses that have been semi-aged. It is also recommended to try this wine with dark meat, like pheasant, served with a hot or spicy gravy.
