Amarone is a wine Mithas not always available because it produced only in the best years, as they have been so far vintages '88 , '90 , '95 , '97 and 2000. 's why an exclusive product and excellent, that only the generosity nature allows its feasibility in exceptionally favorable years.
Corvina Grossa 50%, Corvina 40%, Rondinella 10%.
The best grapes are harvested by hand and placed in boxes for drying up in February / March of the following year , to be subsequently crushed . The low temperatures of the period and the fermentation maceration for 1 month in the wood, until the complete degradation of sugars, allowing the development of particular and intense fragrances. The wine is then placed in aging in oak barrels and barrels of different sizes , in which the extraction of tannins in the wood varies in concentration precisely because of the different sizes of the same. The wine remains in carats for 36 months and then , after a skilful blend , lying in the bottle , which is aged for 6 months in order to achieve a balance of softness and a rare verifiability . Impenetrable ruby red color . Amarone from the nose intense, with balsamic notes , persistent and broad , ranging from small red-fleshed fruit of black currant and strawberry, cherry jam . Equally imperious palate , soft and silky, with hints of sweet cocoa and timeless almond finish . I personally recommend it as a meditation wine even after a meal or at least to match with dishes of game meat too spicy , try it out on the duck boiled with mustard and sweet and sour . Given its size and the large aromatic structure , any random combination may prove to be of unexpected pleasure.
