This is our best known product and truly expresses our company philosophy, shown through the wine’s balance between elegance and structure. Made from grapes grown in the Valpolicella Classico zone, which undergo Appassimento before ageing in large oak barrels for a minimum of 18 months and further maturation of 6-8 months in bottle.
Grapes: Corvina 70% Corvinone 15% Rondinella 15%, other native varieties 10%.
Analysis: Alcohol 15.50% Vol. Total dry extract 32.90 g/l
Vineyard: Situated in the heart of the Valpolicella Classico zone on dry stonewalled terraces facing southwest and southeast, at between 150 and 450 metres above sea level. Soil type silt-clay, partly calcareous and partly on Eocene marls. Grass sward between vines. Age of vines 5-25 years.
Vinification and ageing: Harvest by hand from September to October. Appassimento for about 120 days. Destemmed, then gentle pneumatic pressing. 12 days of cold maceration then fermented at temperatures between 12 and 23°C with manual punching down of the cap three times a day, followed by post fermentation maceration on skins to give a total of 30 days. Complete malolactic fermentation then ageing in 50hl Slavonian oak casks for 24 months. Left to mature in bottle for a further 6-8 months before release. Stabilization natural.
Tasting notes: Colour ruby red, dense and compact. Perfume intense and persistent, ethereal, fruity with hints of cherries and dried prunes, dried flowers and spices. Flavour full bodied and very smooth, with beautifully balanced velvety tannins.
Food matching: A fine companion for all grilled or braised red meats, and game dishes. Perfect with mature cheese. Excellent accompaniment to after-dinner conversation.
