An authentic wine from organic vineyards situated on the highest hills of Valpolicella Classico. It reflects the values of tradition and sustainability that are fundamental to the production philosophy of Cantina Valpolicella Negrar.

Vineyard: The wine is currently produced from two certified organic vineyards in Valpolicella Classico. One is located in the valley of Negrar, at an average altitude of 250 m. It faces south - southwest. The vines are trained on the Pergola Veronese system, with grass between the rows, and the age of the vines ranges from 6 to 40 years. The second is at Mazzurega (Fumane), at an altitude of 450m and facing southwest. Type of soil: variable, clay-loam, moderately chalky and rich in texture in both vineyards. Planting density: from 2,500 for the oldest vineyards to 3,500 vines per hectare for younger vines.
Vinification and ageing: Harvest late September exclusively by hand. Vinification destemmed then gentle pneumatic pressing. Fermentation temperature between 25 and 28°C. Maceration for 7 days. Maturation in stainless steel vats. Full malolactic fermentation. Stabilization natural.
Tasting notes: Colour ruby red. Perfume intense and persistent, with fruity aromas of cherry and plum, floral hints and a twist of spicy black pepper. Flavour fresh and fruity, with an elegant balance of structure and body, and harmonious acidity and tannins.
Food matching: A fine companion for fresh pasta, salami and cheese.
Serving temperature: 14/16°C.
