The magic of the Irpinia terroir lives on in the Feudi di San Gregorio wines, which have always been a reference point for viticulture, not only in Campania, but throughout southern Italy. And therefore it is truly with joy that we approach this Fiano Passito DOC "Privilegio", a wine that from the very name makes us understand how we should prepare for a truly unique experience; it is in fact an exemplary label in presenting a structure where the balance between sweetness, flavor and acidity draws a sublime and flawless sip. The grapes are left to dry for about 8 weeks, then ferment and mature in barriques for 6-8 months. A Passito where tradition and innovation mix in a whirlwind of unique sensations, truly not to be missed.
Vineyards location: Campania, Italy
Grape varieties: Fiano 100%
Tasting notes: Crystalline golden yellow color. On the nose evident soft sensations of dried apricot and small white flowers. In the mouth the silkiness and softness typical of the grape are enriched by a notable acid and mineral shoulder. The finish is long and reminiscent of candied citrus, cinnamon and white peach skin.
Vinification: In barrique for 6-8 months. 12 months in the bottle.
Alcohol content: 12,5%
Food pairings: Perfect in combination with savory blue cheeses and desserts of various kinds. Also excellent with dry pastries, it gives its best with a pastry cream tart and fresh strawberries.
