Grapes: 100% Grillo
Alcohol level: 13.5% vol.
Vinification and refinement: Made from grapes picked at perfect aromatic ripening and then given a very soft pressing. The must underwent temperature-controlled fermentation (16-18°C/60-64°F) in stainless steel tanks, remaining on its lees for 4-6 months. It then matured for few months in the bottle.
Colour: A clear and bright straw-yellow, with faint greenish highlights.
Bouquet: Broad and surprisingly fresh, with notes of citrus, pineapple and a gentle minty hint.
Flavour: Rich and well-balanced, with clear sapid and mineral hints.
Serving temperature: Serve at around 10-12°C (50-54° F.).
Food matches: Perfect with fish and vegetable-based dishes, with raw fish and shellfish.
Organoleptic characteristics: Straw yellow. The nose evokes sweet banana, papaya and acacia flowers. Mouth tasty and dry, fairly soft, with citrus scent in the final.
