After careful selection of the grapes, fermentation in steel vats at a maximum temperature of 12°C and the introduction of selected native yeasts, the wine is aged for 40 months “sur lies” in steel tanks. In this Valle d’Aosta Chambave Muscat, flavours develop through this ageing process producing extraordinary taste and olfactory sensations. The aroma is clean and precise; it merges with elegant mineral and citrus notes, above all pink grapefruit. Taste is broad and complex, elegantly sapid with notes of citrus and acacia flowers on the finish.

Area of production: South-east, south-west facing vineyards in the municipalities of Chambave and Saint-Denis on the orographic left side
Soil type: Morainic, loose, sandy, steep sloped
Varieties: 100% Muscat Blanc or Muscat Petit Grains
Vine training system: Guyot, Goblet, Cordon
Harvest: Last decade of September, first ten days of October
Vinification/Ageing: Wine making: 24-36 hours maceration before fermentation in steel tanks at controlled temperature added with selected autoc hthonous yeasts. Sur lie ageing for of 40 months in steel, with frequent batonnages. Further refinement in the bottle for minimum 3 months
Sight: Golden yellow, bright
Smell: Aromatic, intense, persistent. Scents of sage, thyme and an underlying range of citrus fruit sensations, above all pink grapefruit, constitute the extraordinary bouquet of this wine
Taste: The balance of acid, alcoholic and mineral sensations give the wine an important albeit soft and elegant structure. The finish comes with aromas of citrus fruit and acacia flowers
Serving temperature: 12/14°C
Wine and food matching: Local fat, medium-aged cheeses or shellfish and lightly smoked fish
