The Nus Malvoisie Cuvée Particulière is produced on the historic plots in the Nus area where vines grow on loose sandy rolling slopes. Grapes are collected manually in small crates and are sent off to be processed in the shortest time possible. After soft pressing in vacuum tanks, the crushed grapes are placed in tanks where they remain on the skins for 30 days, following the most traditional wine making system, obviously taking care to prevent oxidation and making sure temperature never exceeds 14°C. Hence we obtain a structured, complex wine without losing mineral content and sapidity. Once completed the vinification process, the wine is poured into wooden casks and refined for twelve months sur lies.

Vinification/Ageing: Fermentation partly in wooden barrels from free-run juice. Aged for 12 months sur lies with batonages (lees contact and stirring). Bottled in the winter the year after harvest and aged in bottles for at least 12 months
Sight: Intense golden yellow colour. Some years it may have a copper hue
Smell: Intense and persistent. Fruity, flowery
Taste: Yellow peach, honey, mountain flowers in this order, ending with vanilla and fine spices. Important structure in the mouth without opulence thanks to its mineral note and right acidic balance
