Breganze Vespaiolo DOC “Valvopara” was born from an ambitious recovery project of old vespaiolo vines, reproduced and grafted in 2009 in the vineyard of the area that gives the label its name. A little more than 5000 plants in one hectare of extension, which give birth to only 639 bottles: a real gem therefore for all enthusiasts wishing to follow the evolution of this new creation present within the Maculan range from the beginning . The grapes undergo a short cold maceration - for a total of 4 days - and then ferment in steel, where they remain to refine for 4 months on the fine lees. An interesting white, which strikes for the excellent persistence of the finish and for the structure which, although important, never gives up a pleasant wave of freshness.

Exposure and type of land: volcanic and tuffaceous hills
Grape varieties: 100% Vespaiola
Vine layout: Light overipening for 10 days, cold maceration at 5 Celsius degree for four days, soft pressing with an inert press machine.
Aging: In stainless steel tanks for 5 months.
Alcohol: 14,5% by vol.
Color: pale lemon yellow with greenish reflections
On the nose: it boasts intensely aromatic notes of ripe stone fruit, honey and orange blossom
In the mouth: dry on the palate it is dry with a lovely balance between its full-bodied mouthfeel and crisp acidity. Local paring is with “baccalà (stockfish) alla vicentina” or white asparagus “alla bassanese”. In general, perfect with roasted vegetables, such as zucchini or squash, or fish courses.
