From 1995, it pays homage to the sculptor Aligi Sassu (1912-2000), family friend. The label shows the Horses in love, his last work, built and located on our property. The wine has his great style: intransigent, dry, and obstinate.
Grapes: Chardonnay 100%.
Wine-Making: When they become fully ripe, the grapes are picked extremely quickly and pressed gently. The most is kept at 8-10°C for one day and then at 16-18°C until the fermentation is over.
Bottling: The cuvee is produced in Spring by a panel of expert tasters, then bottling follows for bottle fermentation.
Refinement: The wine is aged on the yeasts in the bottle for at least 36 months.
Bouquet: Strong and wide-ranging, with hints of flowers and honey.
Taste: Complete, full, persistent.
