Vinification and ageing: The grapes are pressed and put in steel vats where the must is fermented for 20 days at controlled temperatures of approximately 25-28°C. The wine matures for a year in 350-litre French sessile oak tonneaux and is then aged in the bottle for a year.
Soil type: White; limestone predominates with a strong clay presence. Approximately 80 cm deep prior to hitting the parent rock.
Organoleptic characteristics: Intense, deep ruby red. Bouquet intense and embracing with cherry, blackberry and pear aromas and spicy notes of black pepper and juniper berry. Flavour a very well structured wine, both significant and long lasting, with a definite tannic texture and remarkable freshness.
Serving temperature: To be served at around 18°C .
