The name Giuv comes from the family nickname, which we, playfully, reserved for the new wine.
Origin: Medium age vineyards, between six and eight years, aglianico-growing according to the organic method, guyot training system, maximum yield 70 q/ha.
Grape Variety: Aglianico 100%.
Harvest Time: 15/20 October.
Vinification: Classical, of selected and destemmed grapes. Fermentation and maceration of 12/13 days overall in a 50 hl oak vat, manual daily treadings under constant temperature control.
Finishing/ageing: Racking in barriques where the malolactic fermentation ends, twelve months total finishing. Following bottling and final rest in the bottle for around six months before the release on the market.
Tasting notes: Ruby red, good brilliance with vivid shimmers. Intense fragrance, good complexity, scents of red fruits such as cherry and plum together with spicy notes of pepper and tobacco. Dry, fresh and medium-bodied to the palate with still durable tannins backed by a good minerality.
Gastronomic matches: From local cuisine, sausages, cheeses, ragout, to all meat second courses.
