Grapes: Cabernet Sauvignon 100%
Growing area: The vineyards are located in the area of Mezzane and Val d’Illasi at elevations of 100-200 meters, in limestone soils.
Training system: Guyot at a minimum of 5,000 vines per hectare. Vineyard is cover-cropped, and leaf-pulling is practised during the growing stages.
Harvest time: End of September. Exclusively hand-picked, the clusters are pressed immediately after the harvest.
Winemaking and maturation: Maceration time 10-12 days with daily punching down of the cap, drawing off before the end of the fermentation, which finishes at 20°C in steel tank. At the end of the alcoholic fermentation, racking in barriques, where the malolactic fermentation starts. Then the wine matures for at least 12 months then an additional 6 months minimum in the bottle before release.
Appearance: Ruby red with purple highlights.
Bouquet: Intense fruit, with hints of red berry fruit, such as blackberry and raspberry, with good length.
Palate: Full bodied, with well-balanced tannins, and a finish exhibiting hints of liquorice and vanilla.
Serving suggestions: Red meat, game and seasoned cheeses
Best enjoyed at: 16/18°C in ample glass
