San Leonino is the Chianti winery that from January 2014 is part of Bertani Domains. Founded in 1994 in Castellina in Chianti, in the heterogeneous Chianti Classico appellation, where viticulture is based around the cultivation of Sangiovese, varieties that best preserves its peculiarities on soils with complex soil and climatic conditions. In these areas the surface layers make the difference: a hilly area with steep slopes where the marl, clay and limestone tufa, clearly influence the characteristics of the wines produced. From 2014 to San Leonino was reintroduced the "use government Toscano", an ancient method where 70% of the mass is made to make wine in the traditional way, while 30% is left to dry naturally for about three months, and in December, after reassembly, the entire mass is matured in barrels for 5 months. Three labels for tasting made from Sangiovese, obtained with different vinification and aging processes.
"Governing" means adding Sangiovese grapes slightly wilted at the first fresh wine harvest just finished.

Production techniques: the first fresh wine after a first fermentation in cement tanks (in October), thanks to this addition of slightly dried grapes, it triggers a second slow fermentation in oak barrels from 90Hl (during the month of December ), which lasts until the following spring. This process allows a valuable increase in the glycerin content. Factor that gives the wine a softer flavor and round, while still maintaining austerity and elegance.
Tasting notes: ruby red color. Smell focused on aromatic herbs and woody hints, fern and dried red flowers and balsamic reminders. Pleasing to the palate, soft, sustained by a strong acid wake, savory closing. Maturation in large barrels for 5 months.
Alcohol: 13.5% vol.
