This wine takes its character from the original vine, but especially from the environment in which it’s born: a terrain with a great calling and a serene microclimate in which the sea breeze and the temperate air of the nearby mountains are combined, which make it a unique terroir. The original expression of Pinot Bianco grapes, picked in a perfect ripe state, this elegant and enduring has ideally been dedicated to Opimius, roman consul in Aquileia during the 2nd century B.C., developer of vine cultivation in this historically inclined area.

Alcohol level: 13.5% in volume
Type of soil: The vineyard is in Cà Vescovo, in the municipality of Terzo di Aquileia, in the heart of the Guaranteed Origin (DOC) area of Aquileia. The land, which is very rich in clay, has a great ability to hold water, which is then passed on to the plants in the summer season, guaranteeing an excellent bio-productive balance.
Training system: The vines are farmed by espalier with Guyot prunings. Their natural maintenance is very important so it is done by hand with meticulous care. Manual green-pruning of the leaves is done by eliminating the base leaves around the bunch, favouring a drier and healthier microclimate. Only the eastern facing side is green-pruned in order to foster solar radiation during the less sunny hours of the day, allowing
it in this way to preserve its aromas.
Vinification and ageing: The grapes are manually picked, selecting the best bunches, in the early hours of the morning and placed in crates. The crates, which weigh around 15-20 kilos, are then brought to a room which must be thermo-regulated at a temperature of about 4-6°C where they must stay until the next day (20-22 hours). A light pressing of the grapes then follows and fermentation in 25 hl Slavonic oak barrels at a controlled temperature of 16-18°C with a subsequent yeast maturation of 8 months.
Organoleptic characteristics: Straw yellow with light green veins. Manifest aromas of citrus, apple, kiwi, melon, almond flowers and candy. soft approach and savory, then they perceive freshness and a pleasant fruity-citrus eco.
