Vinification and ageing: Vinified by traditional methods in order to emphasize its attractive fruitiness, it is then re-fermented to obtain a fragrant, lightly fizzy style.
Colour: Intense ruby-red with violet reflections.
Bouquet: Intensely fruity, with hints of violets, bitter almonds, sour black cherries and plums.
Flavour: Dry, rounded and savory; slightly pétillant.
Serving temperature: Serve at 14/16°C. (57/61°F.)
Food matches: Excellent with savory tarts, agnolotti, meat filled ravioli, sausages, roast or stewed white meats, and moderately aged cheeses.
