Simposio is named after the most famous discourse on love (Symposium) from Plato’s dialogues, also known as Convivium. This is what inspired it: a banquet with diners sitting round it for the pleasure of conviviality, sharing not only food but emotions, stories, events… in a fundamental experience. Simposio is the utmost expression of TreRose’s Vino Nobile. It is made from the careful selection of grapes, all Sangiovese, from the best vineyards on the estate.
Grapes: the highest and most elegant expression of 100% Sangiovese in Montepulciano. It is the result of a selection of the winery’s best vineyards, especially those with a southwestern exposure. The vines are spurred cordon trained with a planting density of 5000 vines per hectare.
Winemaking: the fermentation temperature is between 25 and 27°C. 10-15 days of final maceration on the skins of 10/15 days at the end of fermentation. It is aged in barriques for 12 months and in 50 Hl barrels for 6 months. Maturation in bottle for about 18 months.
Sensory properties: Simposio is a wine with a classic, traditional and elegant style. On the nose it is complex and subtle, with spicy notes and pleasant hints of candied fruit and coffee. It is austere, with important tannins. It is a mineral wine which closes with a creamy and sweet finish.
