The decision to produce a sparkling wine from Trebbiano di Lugana grapes dates back to the foundation of the winery in 1960s. the deep knowledge of this variety that has a high capacity of adaption to climatic and environmental conditions, is the heritage of Sergio Zenato, who has learnt how to make the best of it. The creation of the bubble with the classic method enhances the features of the grape itself liberating all its purity.
Grape variety: 100% Trebbiano di Lugana.
Geographical location and vineyards characteristics: between Peschiera and Desenzano, the southern area of Garda lake.
Vinification: The must obtained by light pressing is fermented with the natural yeasts of the grape itself at a controlled temperature of 16°C in stainless steel tanks, till the moment of blending and bottling for the second alcoholic fermentation in the bottle. The bottles stand in racks for 18 months and the wine evolves and matures thanks to the action of the yeasts, with the release of aromas from cellular breakdown. The bottles are then clarified and then the deposit is removed by dégorgement.
Tipe of soil: Clay-silt.
Colour: Intense straw-yellow colour with golden highlights, creamy froth and elegant, persistent perlage.
Nose: A sharp, encompassing aroma derived from grapes of perfect richness. The clean bouquet gives soft, encompassing impressions of pear and apple with persuasive shades of peach and citrus fruits.
Palate: A balanced, full flavour on the palate, effervescent and delicate, characterized by a silky vein of acidity that gives it an extremely clean taste.
Gastronomical combination: Excellent as an aperitif and with all meals.
Serving temperature: Serve at a temperature of 7/8°C.
