The name of the ADALIA Company comes from Adalia Bipunctata, a small ladybird with two black spots on its wings. She is our friend, and is a formidable hunter of the main species of aphids. In a corner of the Val di Mezzane, a sunny and well-ventilated area, we find a small jewel of Valpolicella. 5 hectares that want to become the expression of a different concept of farm: young but authentic, innovative but always in direct contact with nature, in one of the most traditional and austere wine areas of the national scene. Thanks to the experience in the countryside and in the winery, to a fresh and enthusiastic management, a new and important reality has developed in the world of Italian wine. Each Adaila wine comes from a particular vineyard that, due to its position, grape variety, age and type of breeding, has been preferred over time to produce that wine, allowing us to reach an undisputed and well-defined quality. All grapes, with organic certification and Demeter, are harvested by hand at the best moment of ripeness, forcing us, sometimes, to make several steps in the vineyards. The fermentations start spontaneously (indigenous yeasts) and take place in 40 hl oak truncated conical vats, where the temperatures are only partially controlled.
