A modest but ultra-refined portfolio of wines of our local traditions that embody the very soul of the Verona area: from the great white wine Soave to the true jewels of Valpolicella and the hills of Lake Garda.The winery in Borgo Rocca Sveva, the historically-important hamlet restored to pristine magnificence in 2003, produces, matures, and packages the ROCCA SVEVA wines, Cantina di Soave’s ultra-premium wine line. In its caves too matures EQUIPE 5, the vintage-dated classic-method spumante. One of Borgo Rocca Sveva’s most striking features is its underground ageing cellars, a fascinating, 2,000 sq.mt.-system of caves that honeycombs the rock formations beneath the Castello di Soave. These unique passageways naturally maintain a constant temperature and humidity year-round, perfect conditions for the storage and ageing of the most valuable wines. The grapes that are brought into Borgo Rocca Sveva are harvested from vineyards managed in accord with the dictates of our Quality Project. At the moment of their arrival at the cellar, their sugar levels are checked against parameters that are set according to grape variety and weather conditions of the growing year, in order to ensure wines of the highest expressiveness. The cellar where the winemaking is carried out is designed on the “French model,” on several levels. This allows less use of pumps and other machines during the various stage of handling the wine, since gravity is used instead, in a procedure described as “cascading” the wine from upper level to lower; this procedure enables more respect to be shown, during every operational phase, for the original quality of the fruit.
